I’m currently exploring the following options:

1. Mailu
2. mail -> This uses postfix
3. docker-mailserver
4. This has some mail server comparisons - LINK

To streamline the process and ensure a quick setup, I'm focusing on mail servers with existing Helm charts. However, if you have any alternatives to Mailu or other recommendations that might be better but lack Helm charts, let me know. I can create a Helm chart for it, and we can use that instead.

Great stuff. I did some exploring as well and I arrived at similar findings. Mailu and docker-mailserver seem to be the most popular options with established support for kubernetes. If you'd like I can assign this issue to you
