direct control over the fluentbit compose file

I am not sure how I could use the fluentbit log-drain.

I want to process my access logs from caddy but the compose file for fluentbit does not mount the /data/coolify/logs directory (or any other useful folder) and you can't change the compose file because it gets reset every time you toggle the log-drain option.

You also (from my knowledge) can't send the logs over network (caddy.log net) since the proxy and fluentbit container don't share a docker network.
