Create a section that breaks down "What's in a collection":

• note what a collection-type is made of
• indicate the current Needs Assessment collections have been created manually
• note how to view a collection
• list fields that Strapi automatically generates/populates
• note other fields that are automatically populated or are of special note for the needs assessment collection
• include a link to the Strapi docs content-type builder for information on content-types and the fields available
• add a link to this section in the table of contents for the collections.md
