Support docker compose v2 #817

Is your feature request related to a problem? Please describe.
Docker compose format has changed a long time ago (March 2024) and there is a docker-compose v2 format that supports things like model-runner. This is not something we would run in cluster but definitely something we could use when running in docker as there could be workshops running the model via docker
Describe the solution you'd like
Update the go compose spec to v2 and add support for things like the model runner in the cmd_docker_workshop_deploy
