In this PR I added a chapter to Part 2 of the textbook explaining the Erlang random variable. This also includes a new random variable card for the Erlang random variable. I go over this PR in my video submission.
I used the Erlang distribution Wikipedia page and this educational YouTube video to learn about the random variable myself.
